Family Recipe: Poor Man's Potatoes

This recipe goes back to my great-grandmother and was a staple side dish for us growing up. It is filled with carbs and protein and I imagine was especially easy and budget friendly during the Great Depression! Plus it feeds a lot of people and is very filling. My mom made a little bit extra, knowing we all loved it and would want seconds! You can make this with any other type of protein. I remember specifically eating it with pork chops and some sort of vegetable side.



Feeds about 5:


7 potatoes

3 slices of bread

3 eggs


How to Make it:


- Slice the potatoes pretty thin, I'd say 1/8-1/4 of an inch in thickness and try to slice them all evenly so that they cook through at the same rate.



-Drizzle a few Tablespoons of oil into a large pan, I would recommend a Wok. Heat the oil up on medium heat.


-Add the sliced potatoes to the pan and begin frying them up. Add salt and pepper to taste.


-In a small bowl break your 3 bread slices into bite sized pieces and set them aside.


-In another small bowl, crack and whisk up the eggs.


-Flip over the potato slices after a few minutes. You want them to have some color on the first side.



-When the potatoes start reaching the end of their cooking time (they should be tender but not too soft, able to poke a fork through them) add in your bread bits to start toasting them up in the excess oil.


-Give everything a good toss and then pour your eggs into the pan. You can pour it all over the top or make individual wells for the eggs to go into, they will all get scrambled throughout the mixture.


-Once the eggs are cooked it is done and ready to be served.
