"X" is for Xylitol Sweets

Xylitol is one of many sugar substitutes. I've talked before about how even organic cane sugar can spike someone's sugar levels. So diabetics or those with diabetes in the family history can sub sugar with sweeteners such as Monkfruit and Xylitol which are both a 1:1 ratio to sugar. So you can still make your old favorites with these sugar substitutes.


If you are in need of some sweets to bake without the worry of sugar intake I've got you covered! Here is a few of my favorite Xylitol Sweets:



Chocolate Chip Cookies

2 cups almond flour

1/2 teaspoon baking powder

3 Tablespoons Xylitol

1 teaspoon vanilla

1/4 cup melted butter

1/2 cup mini chocolate chips


Preheat oven to 350 degrees Fahrenheit. In a large bowl mix together the almond flour and baking powder. Add in the melted butter, vanilla and Xylitol, stir until well combined. Fold in the chocolate chips and scoop out 12-16 balls onto a prepared baking sheet. Press down on the cookie dough to flatten. Bake for 10-12 minutes.



Vanilla Ice Cream

1 ¾ cups heavy whipping cream

1 ¼ cup whole milk

¾ cup Xylitol

⅛ teaspoon salt

1 Tablespoon of vanilla extract


Whisk ingredients into a bowl and then pour it directly into your ice cream maker. Follow the instructions according to your machine's user guide. Voila! Easy sugar free homemade ice cream!




Pancakes

2 cups almond flour

1 Tbsp avocado oil

4 eggs

1 tsp vanilla

1 tsp baking powder

2 Tbsp Xylitol

Pinch of salt

8 Tbsp butter, melted


Combine all ingredients except for melted butter to a blender and blend until smooth. Add butter and blend again. Let it sit for 5 minutes and preheat your pan in the meantime. Pour batter onto preheated pan and wait until cooked one one side, flip and repeat until pancake is cooked. (If batter is too thick after the 5 minute resting period, add some water or milk to thin out the batter to the consistency of your liking)


Brownies

1 1/2 cup Xylitol

3/4 cup almond flour

2/3 cup cocoa powder

1/2 cup powdered sweetener

1/2 cup chocolate chips

3/4 teaspoon sea salt

2 large eggs

1/2 cup olive oil

2 Tablespoons water

1/2 teaspoon vanilla


325 degrees Fahrenheit. Mix all the wet ingredients together really well. Then add all the combined dry ingredients. Stir until combined. Pour into an 8x8 inch square pan. Bake 40-48 minutes.
