Zero Carb Lasagna

This is my favorite way to eat lasagna, especially when I'm trying to lower my carb intake! You don't have to cook any lasagna noodles, making this an easy layer and cook meal.


1 pound Italian sausage

¾ pound grass-fed ground beef

1/2 small onion, chopped

2 cloves garlic, minced

4 cups marinara sauce

16 oz. ricotta cheese

1 egg

½ tsp salt

12 ounces mozzarella cheese, sliced

¾ Cup Parmesan cheese

Thinly sliced organic deli Chicken Breast (16 slices or about 8 ounces)


  • Preheat oven to 425

  • In a large pot cook, sausage, ground beef, onion and garlic, medium heat, stir in marinara sauce when everything is fully cooked

  • In a mixing bowl, combine ricotta and egg and 1/2 teaspoon salt

  • Assembly in 9 x 13 pan: 1 and 1/2 cup of sauce mixture, deli slices, 1/2 ricotta mixture, 1/3 of mozzarella. 1 1/2 cups meat sauce, 1/4 cup parmesan. Repeat layers and top with remaining mozzarella and parmesan.

  • Cover with foil and bake 25 minutes. Remove foil and bake another 25 minutes
